Sous Chef Responsibilities:Under direction from the Head Chef you will be responsible for preparing, cooking, and delivering high-quality food products for our venuesAssisting the head chef in regularly reviewing and improving our food offerings and menu items across all venuesGuaranteeing an exceptionally high standard of culinary services offered to our guests.Prepare the company's food offerings in alignment with the company branding, message, positioning, market, and vision.Managing and motivating kitchen staff to provide a high level of service at all times.Maintaining food hygiene, safety, and quality in the venues as well as developing policies and ensuring the Venue meets all relevant regulations.Managing the Kitchen to run profitably and to meet qualitative and quantitative targets as set by the EmployerPreparing the cooking instructions and ensuring they are duly applied.Coordinating with Bar/F.O.H. staff to ensure that the service runs smoothly at all times to the venue.Ensuring that all relevant information is passed along to other departments and management as appropriate.Providing training to staff who are assigned to learn kitchen work.Assisting with carrying out performance appraisals of the kitchen staffPreparing a regularly updated training plan for the whole kitchen department and ensuring the implementationKeeping track of trends in the restaurant market and relevant legislation/regulationsManage kitchen stock, supplies, and ordering within budget and ordering policies as directed.Ensuring that equipment and appliances are used correctly and kept in good order by kitchen staff.CDP Responsibilities:Under direction from the Head and Sous Chef you will be responsible for preparing, cooking, and delivering high-quality foodGuaranteeing an exceptionally high standard of culinary services offered to our guests.Help on shift, lesser experienced kitchen staff during service.
When appropriate or asked, help to train those staff on new cooking techniques and our in-house recipes.Duly applying cooking instructions from Head Chef.Prepare the company's food offerings in alignment with the company branding, message, positioning, market, and vision.Complying with food hygiene, safety, and quality company standards as well as developing policies and ensuring all relevant regulations are met.Coordinating with Bar/F.O.H. to ensure that the service always runs smoothly to all venues, including altering dishes at guests' requests to suit various dietary requirements.Ensuring that all relevant information is passed along to other departments and management as appropriate.Manage kitchen stock, supplies, and ordering within budget and ordering policies as directed.Ensuring that equipment and appliances are used correctly and kept in good order.Assisting with menu development and planning, in line with GP targets and COG framework.Completing daily ordering with various suppliers when required.Follow procedures when cleaning up and closing.Follow procedures for signing in and out and clocking hours accurately.Carry out your duties with honesty, integrity, and professionalism.
