You will run a well organised kitchen and be fully conversant with food control plans, health and safety and hygiene.

Responsibilities | Ngā Haepapa
Draft concept ideas, plan menus and develop, prepare and produce all recipes, focusing on sustainable and locally sourced produceEstimate food and labour costsOrganise the kitchen service operations for the restaurant, conference and room service on a day to day basis so that they run efficiently and productivelyMonitor quality of dishes at all stages of preparation and presentationTrain and develop junior chefs and kitchen assistants Interview and select all new team membersDiscuss food preparation issues with Managers, kitchen and front of house staffDemonstrating techniques and advising on cooking proceduresPrepare and cook foodExplaining and enforcing hygiene regulationsBe pro-active in estimating and controlling food and manning costs being fully aware of forecasted business and targeted profitability whilst maintaining standards.
Order food supplies in line with budgets.
Maintain a sound knowledge of the hotel’s procedures for purchasing of food stocks, the control of purchasing levels.
Ordering of kitchen equipment and suppliesManage the Food Control Plan and licensingFoster an environment of cooperation and respect between co-workers Requirements
About You | Ko Koe Tēnei
Passion for developing innovative menus with exceptional presentation and deliveryNZ Register Diploma (ANZSCO Skill Level 2) OR 3 years minimum experience in a modern, successful restaurantExcellent range of experience with multiple cuisine typesExpert in product quality and presentation skillsOutstanding communication and leadership skillsA solid understanding of managing costsUnderstanding of current culinary trends and kitchen processesWorking knowledge of NZ H&S legislation (Health and Safety at Work Act 2015)Benefits
